Sauvignon blanc is the loud dry white: grapefruit, lime, passionfruit and cut grass, with high acidity and a dry finish. It is the wine people reach for when other whites taste boring.

How to choose

How loud do you want it? Marlborough in New Zealand is the most tropical and herbaceous version. Sancerre and the wider Loire Valley are drier, stonier and more restrained. California sits in between, rounder and sometimes lightly oaked, where it may be labelled fumé blanc.

Food. Goat cheese, oysters, ceviche, green salads with vinaigrette, asparagus, herbs, anything with lime or coriander. It is one of the few wines that handles vegetal food without tasting metallic.

Sweetness. These wines are normally dry, but very ripe fruit can read as sweet. Cooler regions and lower alcohol give the drier impression.

Serving. 45 to 50 degrees, and give it ten minutes out of the fridge so the aromatics show. Drink it within a year or two of the vintage.
