How to choose
Champagne is the region. Sparkling is everything else. Prosecco is softer and fruitier. Cava is drier and toastier. American sparkling sits in the middle.
Brut means dry. Extra Dry is actually a little sweeter than Brut, which is a trick the labels play on everybody.
Mimosas do not need Champagne. Prosecco is better in them and nobody will know the difference once the orange juice is in.
