Hosting is an arithmetic problem before it is a taste problem. Plan on a half bottle per person for a dinner and more if the night is long, then split it two thirds white and sparkling to one third red if the weather is warm, and flip that in winter. Buy one style of each rather than six interesting bottles nobody finishes. Sparkling wine at the door does more for a room than anything else you can pour.
